In the first lecture of this course a general introduction on sustainability is given. Moreover, the different aspects of the food supply chain are discussed. The focus will be on why we need to consider sustainability, how to define sustainability and how various sustainability aspects can be considered within the food supply chain.

The students will then analyze a scientific paper on the topic which they need to present in class, and they will write an essay on how to transform a (self-chosen) food product into a sustainable version.

Students will learn how to assess, define and measure sustainability in general.

Students will gain knowledge on the different parts of the food supply chain and learn which sustainability aspects are important at which part of the supply chain.

Will be provided at the introduction lecture
Essay on transformation of a food product towards a sustainable product (70% of grade)

Group presentation of scientific paper (30% of grade)
